Why is my dog rubbing on pickled herring?

We dropped a piece on pickled herring on the ground and my dog ran over, picked it up, took it to the center of the room, and started rolling all over it. She's been doing it for like a half hour. Rubbing her head into it, flopping on it, why is she doing this?
